Our journey starts with producers who send us seafood directly. Not just any producers, but the likes of Torei, Mitsubishi's seafood arm, and Tsukiji Kanisho, Japan's top crab merchant. Them to us to you, first-hand, before the seafood even reaches markets like Toyosu.
